I consider myself privileged that my passion for food and cooking has taken me all over the world from top restaurants in London to the glistening waters of Hawkes Bay in New Zealand, to the enchanting Irrawaddy River in the ancient land of Burma, where I was lucky enough to work as Executive Chef aboard the Orient Express Cruiser ‘The Road to Mandalay’ for four fantastic years. With my roots firmly in Somerset, it’s perhaps no surprise that I’ve returned to England bringing with me my individual style of cooking with dishes heavily influenced by the flavours of my travels, yet prepared using some of our county’s finest local ingredients. This book is a collection of my favourite dishes and draws on my own individual style: a fusion between Asian and European cuisine. All are recipes that have featured as favourites on the menu at The Red Lion in Babcary and all promise a truly individual approach that echoes my love for oriental flavours and local produce. I hope you enjoy them.
